Grilled Caesar Salad

Grilled Caesar salad is the perfect accompaniment to just about any piece of meat you choose to grill or is perfect on its own. Grilling the romaine imparts a slight smokey flavor that is unique for a salad. Grilling also softens the crisp romaine slightly and the warmth really helps bring out the flavor. Using room temperature salad dressing is essential. You want to eat this salad slightly warm to get the most out of the flavors.

Ingredients

2 Heads Romaine Lettuce

2 tbsp Extra Virgin Olive Oil

1 cup Caesar Salad Dressing

1 cup Croutons

4 oz. Parmesan Cheese

Directions

1Preheat GrillGrates to medium-high.

2Rinse and pat dry the lettuce. Cut the 2 heads in half lengthwise. Brush surface with olive oil and grill about 4 to 5 minutes total, turning occasionally. Cut the base of the romaine off and discard. Place each wedge on a salad plate and drizzle with Caesar dressing. With a vegetable peeler, shave the Parmesan over each salad, garnish with croutons and serve while still warm.
