Grilled Beets

I never intentionally ate a beet, I admit it and even blogged about it. My wife loves them so it was only a matter of time. I was surprised that I actually liked them and we’ve grilled them 100's of times since. They add great color to the grill and your plate and I understand they are very good for you… Beets being a root vegetable like potatoes grill in a similar manner only beets have more natural sugar so they caramelize very nicely. We like ours with some tangy goat cheese crumbled over top.

Beets On Grill

Ingredients

4 medium sized beets

2 tablespoons olive oil

1 teaspoon freshly cracked black pepper

1 teaspoon kosher salt

Directions

1Peel the beets ( you may want to wear food handling gloves so your fingers don't get stained red).

2Cut the beets into half inch thick slices and place in mixing bowl.

3Add the olive oil, black pepper and kosher salt and toss.

Grilling Instructions

1Preheat grill to 400F at the GrillGrate surface. Placed the beets on the grill and cook for 25-30 minutes turning every 8-10 minutes.

2Beets are finished when you can easily pierce them with a fork.
