This pork recipe was submitted to us by our new friend Ray Sheehan over at BBQ Buddha. Ray makes some world class BBQ sauces and rubs and he was kind enough to set us with some samples along with this fine recipe featuring brined pork chops. When you brine a piece of meat, especially a lean cut, you are able impart flavor and moisture. The use of dark beer and molasses gives this recipe a nice nutty flavor and amber color. We recommend brining for at least 8-12 hours for maximum flavor.
